Hash House a Go Go is great. If you are alone or in a pair you can get in faster if you eat at the bar in there. If there is an open seat you can sit immediately.

I used to like the steak and eggs at the MC's cafe - typically something I got late evenings when I was out of step / jet lagged (sp?).

My non-buffet breakfast of choice is the Irish Breakfast at Nine Fine Irishmen. It's available as a lunch 11am-4pm (this place years ago was open for breakfast hours with a breakfast menu, but no longer). A bloody mary goes nice with the breakfast.

BBKings at Mirage has some interesting sounding breakfast items.

I rarely (go anywhere) for breakfast when I am in Vegas because I usually want to get the first $3/$6 game going at the Mirage. (I'll often get there just early enough to run across the street and get an oatmeal and a smoothie at McDonalds.)

Hash House at the IP has been mentioned a couple of times, and I want to echo that recommendation. However, I never did the chicken & waffles. My star breakfast dish there is the maple infused chicken breast (itself large enough to be a meal) on a huge pile of bacon-griddled mashed potatoes, two eggs, a HUGE roll, and a nice big hunk of fruit, usually watermelon.

have to agree about trusting minton where food is concerned.

i go to ellis island several times on my trips to vegas, i love the steak special and have had many a good breakfast there as well.

I like the Egg & I. It is off the strip, west of I-15 on Sahara, so you need a car or taxi.
